Pepper X has surpassed the Carolina Reaper as the world’s hottest chili pepper. It registers an average of 2,693,000 Scoville Heat Units (SHU), making it significantly spicier than the Carolina Reaper, which averages about 1,641,183 SHU. The Scoville Heat Unit is a measurement used to quantify the spiciness or heat of chili peppers and other spicy foods. Ed Currie, the creator of Pepper X, cultivated it on his South Carolina farm and developed it as a crossbreed between the Carolina Reaper and another exceptionally hot pepper from Michigan. Pepper X’s unique characteristics, including its curves and ridges, provide more surface area for the capsaicin-rich placenta tissue, which is responsible for the intense heat.

Pepper X’s spiciness has made it a sensation among chili enthusiasts, even though it can lead to intense heat sensations and discomfort when consumed. As with the Carolina Reaper, Pepper X is often used in hot sauces to add extreme spiciness and heat to dishes. However, Pepper X pods and seeds are not available for sale, and Currie has opted to protect his intellectual property by limiting access to the pepper. As a result, Pepper X can mainly be enjoyed through specific hot sauces that contain it.

The Scoville scale is a measurement used to determine the spiciness or heat of chili peppers and other spicy foods. It quantifies the concentration of capsaicin, the active component responsible for the burning sensation when it comes into contact with human tissue. The scale assigns a numerical value, known as Scoville Heat Units (SHU), to each pepper or food item, indicating its spiciness level. The higher the SHU, the spicier or hotter the pepper is considered. The scale was developed by pharmacist Wilbur Scoville in 1912 and remains a standard reference for assessing the spiciness of peppers and spicy products.

A commonly held belief is that the seeds of a pepper are what makes it hot. However, this is not true, as the capsaicin is contained in the placenta, the tissue which holds the seeds.

Developing new pepper breeds is indeed a patient and meticulous process. It often involves selective breeding to encourage the emergence of specific traits over several generations. Since the first-generation plants carry many of their parent’s traits, it takes numerous generations to stabilize hybrids and obtain consistent and predictable characteristics in the fruit. Ed Currie’s commitment to his pepper-breeding efforts is evident through his dedication to conducting over 100 crosses every year, with the hope that a select few will eventually make it through the entire 10-year development cycle. This patience and persistence are essential in creating unique and exceptional pepper varieties like Pepper X.

Developing new pepper varieties, like Pepper X, is indeed a time-consuming and lengthy process. The breeder’s goal is to obtain desirable traits, such as high capsaicinoid content, which requires continuous crossbreeding efforts. The breeding and cultivation of these super-hot peppers are intricate and require patience, experimentation, and a deep understanding of pepper genetics. It may be some time before another pepper can claim the title of the world’s hottest.
